What is Texas Ridge Sausage Club?

Texas Ridge Sausage Club is a Buyers' Club for pastured pork products. Rather than simply purchasing individual retail pork products our farm produces, select customers become “members” of this Buyers’ Club in order to receive exclusive access to special bulk pork products, particularly sausage, at a discounted rate. These products are ONLY available to Sausage Club Members.

Cost of Membership:

For a one-time $20 membership fee, you receive lifetime access to Sausage Club offerings, so long as Sausage Club exists. Join anytime and there's no need to renew. Membership fees are non-refundable. Members receive access to Sausage Club Shares and products, but are under no obligation to purchase products.

Sausage Club Shares:

FULL SHARE = 60 pounds of sausage (50 pounds bulk uncased sausage, 10 pounds link cased sausage) = $400+tax (retail value $590)

HALF SHARE = 30 pounds of sausage (25 pounds bulk uncased sausage, 5 pounds link cased sausage) = $200+tax (retail value $295)

MIX & MATCH SHARE = 30 pounds or more of link and bulk sausage, distributed as desired by Member. Pricing based on $6.00/pound for bulk uncased sausage and $10.00/pound for links. 

How it works:

Sausage Club harvests take place about every six months, generally in January and July of each year. Members reserve their sausage shares in December or June of each year for that term’s harvest. Members select sausage from a list of custom Texas Ridge sausage flavors that may vary from harvest to harvest. Members may also be given exclusive access to other specialty bulk pork products not available to non-members. Any extra sausage left over after members have claimed their shares is available for purchase by members only, or marketed to new or future members.

Is sausage made with the same pork I buy at the farmers market?

YES! The hogs used for Sausage Club have been raised their entire lives in our program, under our management. They receive the same non-GMO grain ration as our retail pigs, and are raised without chemicals, pesticides, medications, hormones or vaccines. A pig becomes a candidate for Sausage Club because it is too big, too small, too mature, or in some other way no longer suitable for our program, and doesn’t meet the criteria for our regular harvests.

Sausage Club hogs will be harvested on our farm and turned into sausage at a professional meat processing facility of our choosing.

What ingredients are in Texas Ridge sausage?

Worried about freezer space?

 Sausage will come frozen and packaged in approximately 1-pound packages. Sausage Club pick ups will take place at Texas Ridge in Deary or at a drop point location to be determined. 
One 30-pound half share takes up 0.78 cubic feet of space, and fits in a box that is 10"x15"x9".  A 60-pound full share takes up just over 1.5 cubic feet of space and fits in a box that is 20"x15"x9".
If you pick up your entire share at once, you save 5% over the already discounted price. But if you have extremely limited freezer space, you can choose to have us store your sausage and pick it up a little at a time over a 6-month period. At the end of 6 months, all remaining sausage must be picked up.

Payment options:

Members will be invoiced for their sausage shares as soon as they are available. Payment for the entire share is required upon invoicing, but Members who pay for AND pick up their entire share of sausage at once will save an additional 5% on the price of their share.
